Prep your palates: any talk of Hedy Goldsmith is guaranteed to leave you craving something sweet.
The superstar pastry chef has been on our radar for a while now, having gotten her start in Miami crafting desserts in luxe dining spots like Nemo and Prime 112. But it was in 2007 that everyone dropped their forks to give her indulgent plates their undivided attention.
It was then that celebrity chef Michael Schwartz brought Goldsmith on the team at his flagship resto, Michael’s Genuine Food and Drink. Fast-forward six years and find her at the helm of the dessert menu at all five Genuine Hospitality Group restaurants, including Michael’s Genuine in Grand Cayman.
In a city where juice cleanses and kale salads oftentimes replace rich meals, Goldsmith keeps Miami’s sweet tooth alive with some of the most creative, multi-dimensional eats around. Flavor, texture and some surprising ingredients—think curry, bacon and chipotle!—bring her whimsical recipes to life.
The mutable nature of her desserts means one day is for seasonal fruit jellies and the next for homemade pop tarts. Picture this: one of Goldsmith’s most lusted-after desserts is the Tangerine Creamsicle Pot de Crème with buttermilk doughnuts and blackberry-tarragon compote.
Actually, the whole gamut of Goldsmith’s career as a pastry chef is sprinkled with surprises. Her peanut butter curry ice cream is not for the faint of heart. Other favorites include popcorn and peanuts, pie-in-a-jar in assorted flavors and whoopie pies.
