Chrystal’s Apple Spice Cake

According to The Boston Globe, compact orchards are growing in popularity and prominence. Residents can install these orchards made up of dwarf fruit trees, apple being the most popular, in a day. With minimal maintenance you can expect fruit in a few years. With your abundance of home grown apples, give Chrystal’s Apple Spice Cake a try.


  • 1 ½ C. flour minus 2 Tbsp
  • 2 Tbsp cornstarch
  • 1 ¾ tsp baking powder
  • ¼ tsp salt
  • ¼ tsp cinnamon
  • ¼ tsp cardamom
  • 1 granny smith apple
  • 1 C. sugar
  • ½ C. canola oil
  • 2 eggs
  • ½ C. milk
  • 2 tsp vanilla extract
  • 1 tsp orange zest


Preheat oven to 350º. Grease a 9-inch spring form pan, or any 9 inch pan will tall sides. Combine the flour, cornstarch, baking powder, salt, cinnamon and cardamom in a bowl and set aside.

Cut apple into slices that are about a quarter inch thick, and lay them in the bottom of the pan in a single layer.

With a hand held mixer mix the sugar, oil, eggs, milk, vanilla and orange zest until well combined. In small batches incorporate the flour mixture. Pour batter over apples and bake for 30-40 minutes until the cake is firm and springs back to the touch.

Allow the cake to cool enough to handle and run a butter knife between the cake and pan to loosen the cake.

Turn the cake over on a plate, slice and enjoy.
