Coconut Shrimp Dip Featuring Miami Brewing Co.’s Coconut Ale


Last week, we got a chance to spend some time with beer connoisseur Julio Amado of Miami Brewing Company, assistant to owner Peter Schnebly. He told us all about where Miami Brewing Company has been and where it’s going. But perhaps most importantly, he gave us some free samples. Obviously we had to make a recipe.

We tried the Big Rod Coconut Ale, which tastes like a day at the beach in a can. It’s refreshing, subtly sweet, and light but flavorful. Perfect for, we figured, some coconut shrimp dip. And we were right.


  • 1 cup orange juice
  • 1 cup Miami Brewing Co. Big Rod Coconut Ale
  • ¼ cup soy sauce
  • 1 tbsp. lemon juice
  • 3 tbsp. lime juice
  • 2 tbsp. honey
  • ¾ cup brown sugar
  • 2 tsp. chopped fresh garlic
  • Some shredded coconut for garnish


Combine the orange juice and the beer in a bowl and whisk together.  Then add the brown sugar and stir until incorporated. Next comes the soy sauce, honey, and lemon/lime juices. Last but not least, mix in the garlic and top with some toasted coconut! Enjoy with your favorite coconut shrimp recipe, and maybe even another cold Big Rod brew!
