Tuna Pizza by Chef Makoto Okuwa of Makoto Bal Harbour

Celebrity Chef is bringing you along as we explore the the kitchens of some of the most talented chefs around the country. We’ve been showcasing Chef Makoto Okuwa’s incredible talent for Japanese cuisine, and today we will show you yet another fresh and delicious dish from his namesake restaurant, Makoto, in Bal Harbour.

Makoto’s menu features traditional Japanese dishes and more with inspiration from other cultures. We took you behind the scenes to watch Chef Makoto prepare a Peruvian inspired dish called Scallop Tiradito, and the impeccably fresh Toro Tartare. today we watch him prepare his Tuna Pizza for a twist on a traditional Italian dish.

Straying from tradition, Chef Makoto assembles his pizza starting with a base of avocado puree. He then fills a a light puff pastry with seasoned foam. This pastry is topped with freshly-sliced rare tuna and some classic Italian toppings, including tomatoes, onions and olives. This twist on an Italian classic is perfectly adapted into light Japanese fair, showcasing fresh tuna.
