Cacio e Pepe

Ingredients

1 pound angel hair pasta

4 cups water, salted

1 cup water

1 cup freshly grated parmesan cheese (or pecorino)

Lots of black pepper

Preparation

Drop pasta in a pot that will allow it to fit lengthwise and add water. Then, season your pasta water with salt.

Cook the pasta over medium heat, stirring the noodles periodically to keep them from sticking together.

Add parmesan cheese and stir it into the pasta until the cheese is melted. By the time the cheese is stirred in, the pasta water should be mostly absorbed or thickened enough to coat the noodles. If the pasta starts to lose it’s sheen or stick together, add another splash of water and stir.

Lastly, top with fresh-cracked black pepper and serve immediately

Ravioli Lasagna

Ingredients

1 lb lean ground beef

garlic

salt

pepper

24 oz marinara sauce

1-1/2 lbs frozen mini cheese ravioli

6 oz shredded mozzarella cheese

Preparation:

Preheat oven to 400°F.

Cook ground beef in a large skillet over medium-high heat, seasoning with garlic salt and pepper, until no longer pink. The, drain then return to the skillet and set aside.

Next, spread 1/4 cup marinara sauce in the bottom of a baking dish, and add the frozen ravioli, ground beef, sauce, and cheese. Repeat layers two more times.

Cover with a sheet of non-stick sprayed foil then bake for 1 hour.

Remove foil, and bake for 10 more minutes, or until cheese is golden brown and bubbly.

 

Chicken Enchilada Casserole

Ingredients

1 lb chicken breasts, cut into pieces

salt and pepper (to taste)

1 cup enchilada sauce

1 cup sour cream

3/4 cup jarred salsa

1 cup frozen corn thawed

4 oz diced green chilies

12 white corn tortillas, torn into bite-sized pieces

1 cup shredded cheddar cheese

Preparation

In a large bowl, mix the enchilada sauce, sour cream and salsa then whisk until well combine. Then, add cooked chicken, corn, and green chilies, and stir well. Add corn tortillas, and keep stirring until everything is well combined

After that, spray a casserole dish with nonstick spray then scoop mixture inside. Top with cheese, and bake for 25 minutes, or until golden brown.

Let rest for 5 minutes before serving, and top with green onions and salsa if desired.

Chocolate Filled Croissants

Ingredients

12 pieces fun size dark chocolate bars

2 sheets Puff Pastry, thawed

Preparation

Preheat oven to 400°F, and line two baking sheets with parchment paper.

While the first sheet of puff pastry is being worked, keep the other one in the refrigerator. Unfold the first sheet of pastry, and slice it lengthwise down the middle. Then, slice the two strips into three equal parts, making 6 squares.

Next, place one piece of chocolate toward the bottom of the chocolate, and wash one short end of pastry with egg.

Fold the long sides in like a burrito, then roll the dough up over the chocolate.

Place the croissants on the baking sheet, and wash the top with egg wash. Bake for 15-18 minutes or until golden brown. While the first batch is baking, repeat the above steps on the second sheet of pastry.

Let croissants sit for 5 minutes before serving.

Thin Mint Cookies

Ingredients

15 Chocolate Wafers

8 oz Semi Sweet Baking Chocolate

1/4-1/2 teaspoon peppermint extract (or oil)

Preparation

Line a baking sheet with parchment.

Then, chop the chocolate into small pieces

Put the chocolate into a small microwave safe bowl, and heat it for 60 seconds. Stir the chocolate and put it back in the microwave for 15 more seconds, stirring in between, just until most of the chocolate is melted.

After that, stir in the peppermint extract. Using a fork, dip the cookies very gently in the chocolate to coat on both sides. Let the excess chocolate drip off before setting the cookies down on the baking sheet.

Let set at room temperature, and then put them in the refrigerator.

Yogurt Oatmeal

Ingredients

1/2 cup old-fashioned or rolled oats, uncooked

100 gram yogurt cup, any flavor

3 tablespoons milk

Preparation

In a small bowl, mix oats, yogurt and milk. Cover and place in your fridge for a minimum of 6 hours to let the oats soak up some of the liquid.

After that, remove from fridge and add desired fruit, nuts and spices.

Apple Crisp

Ingredients

2 tablespoons butter

2 apples, chopped

2 tablespoons brown sugar

1 teaspoon ground cinnamon

2 tablespoons golden raisins

1/2 cup granola

1/4 cup whipped cream

Preparation

In a saucepan melt butter over medium-high heat.

Add in apples and brown sugar, and cook 2 to 3 minutes, stirring frequently, until apples are softened.Then, add in the cinnamon and golden raisins. Cook 1 more minute.

Remove from heat and divide among two glasses or bowls. Top with granola and whipped cream.

Bacon and Egg Quesadilla

Ingredients

4 eggs

4-6 slices bacon

2 medium to large tortillas

1/2 cup shredded cheese

chopped veggies of your choice

Preparation

Cook bacon in a nonstick pan over medium heat until crispy, and then set to drain on paper-towel lined plate.

Pour bacon grease in a heat safe container. Deglaze the pan very carefully with about 2 tablespoons of water, and discard pieces of charred bacon.

Add the whisked eggs to the pan.

While the eggs cook, layer one tortilla with half of cheese, veggies and bacon.

Once the eggs are ready, top tortilla with eggs, remaining cheese and the other tortilla.

Carefully place quesadilla in pan and cook for 2-3 minutes, or until cheese melts and the bottom has browned. Flip tortilla and cook another 2 minutes.

Macn Cheese with Breadcrumbs

Ingredients

1 1/2 cup elbow macaroni pasta

3 cups yellow grated sharp cheddar cheese

1/2 cup sour cream

1/4 cup of butter

1 medium red onion, diced

1/4 teaspoon parsley

Salt and pepper (to taste)

3 cups milk

1/2 cup bread crumbs

Preparation

Preheat oven to 350°F, and saute diced red onion in 1 tablespoon of butter. Then, drain and cool.

After that, in a bowl, mix cheddar cheese, sour cream, and butter. Then add onions to the cheese mixture, and combine well. Add milk, keep stirring.

Meanwhile, bring 4 cups of water to a boil. Salt the boiling water. Stir in pasta and boil 10-12 minutes, stirring recurrently until ready.

Drain well and pour in large bowl of cheese mixture. Stir until fully combined.

Place macaroni mixture in a sprayed baking dish. Sprinkle on top cheddar cheese, parsley, salt, pepper, and bread crumbs. Bake for 45 to 50 minutes.

Pico de Gallo

3 Roma tomatoes, diced

1/4 red onion, thinly diced

1 jalapeño, thinly diced

1/4 teaspoon sea salt

1/8 teaspoon black pepper

1-2 tablespoons chopped cilantro

Preparation

Combine everything into a medium bowl and toss.
